  • 12 medium-size tomatoes (about 4 ½ pounds [2 kg] total)

Method

Cut the tomatoes in half crosswise and squeeze out the seeds. Chop to a chunky consistency, so that each piece is roughly ½ inch across. Put the tomatoes in a nonaluminum saucepan and bring to a simmer on high heat, stirring almost constantly with a wooden spoon so the tomatoes don’t stick. When the to
