Separately wash and drain the fruits.
In a nonaluminum saucepan, toss the gooseberries with ½ cup sugar or a little more, depending on the tartness of the fruit.
Warm the gooseberries over moderate heat just until they begin to collapse and give off their juices.
Turn the gooseberries and juices into a bowl and refrigerate for at least 2 hours.
