All good cooks tend to treat the lobster with reverence. Even when served cold in salad it takes on proportions that go beyond a treat. That treat really started in the lobster shacks and fish houses that follow the coast from Maine to Montauk. It is their hot dog, and they serve it on a toasted and buttered frankfurter roll. They have made it one of life’s simple pleasures.
