  • 3 tablespoons fresh lime juice
  • ¼ pound

Method

In a small nonaluminum saucepan set over moderate heat, combine the gin and lime juice and cook until reduced to a thick glaze, almost to the point of evaporation.

Off the heat, whisk in 1 to 2 tablespoons of the butter.
