Duck is such a flavourful and tender meat and I wanted to showcase how versatile it can be with this Asian-inspired dish. The spices and aromatics really complement the duck’s game flavour and the fresh salad gives a fresh contrast to its natural richness. The duck, for this dish, is sourced locally from a great farm on Grampound Road, which inspired the name.
