My family rarely buys meat in winter as my father goes hunting regularly. Wild geese are the usual fare, but sometimes he brings in partridge and we love making a gamey borsch with it. It goes perfectly with the earthy beetroot and mustard kale: a most nourishing plate of food. If you ever have time, get some Agen prunes and smoke them, preferably over fruit wood, and add those to the borsch too.
