At the beginning of each autumn we cheer the arrival of game, and partridge appears pretty quickly in numerous incarnations on my menus. These small birds are fantastic roasted with bacon rashers covering the breasts to keep the tenderness.
For the Malvani spice powder, toast the whole spices individually in a dry frying pan over a medium heat until aromatic. Immediately tip out of the pan into a spice grinder. Add the ground nutmeg, turmeric and asafoetida, and grind into a fine powder. Sift through a fine sieve. Store in an airtight container in a dark cupboard for up to 1 month.
