The beauty of this dish is that all the ingredients are at their peak around the same time. The mallard are young and tender but still have their fabulous depth of flavour. The seasonings are very simple, each element coming together to create an overall balanced dish. The beefsteak mushroom is one of my favourites available in this country and when warmed gently, as we do here, it has a subtle bite to it as well as an incredible juiciness and a beautiful acidity that’s naturally present.</
