I love this way of eating partridge. The consommé, infused with some Asian flavours, gives classic game a light modern twist. If game stock isn’t available simply make a chicken stock and add the trim from the partridge carcass. If you are doing this, start it the day before to allow time for the stock gain flavour and to cool before clearing it for the consommé.
