When I made this for a cookery demonstration at Olympia, no one believed how I could transform frozen peas and concentrated mint sauce into a soup good enough to serve at a dinner party. Ids one of the best storecupboard soups I know and everybody loves it. Serve it with a swirl of cream and a sprig of fresh mint, if you have it. Ids also very good with scraps of crisp grilled bacon and parmesan croûtons.
