Mash the potatoes until quite smooth. Season them with salt, pepper and a pinch of nutmeg. Tip the mashed potatoes on to a floured surface. Make a well in the middle and add a quarter of the sifted flour, and then the herbs and egg yolk. Sprinkle on the olive oil. Using your fingertips, quickly work the mixture to incorporate the flour, adding more as you do so. You will end up with a soft and light but surprisingly durable dough.
