The distinctive, bitter, lemony tang of rocket goes well with bland foods like potato, beans and pasta, and creamy seafood like squid and scallops. This pesto is bitter and creamy at the same time; it is delicious stirred into soups made with these ingredients just before serving. Serve it in its own bowl for people to help themselves.

Ingredients

  • two 30 g bags of rocket, rinsed and dried
  • 1 garlic clove
  • 3 tablespoons

Method

  • Put the rocket, garlic, pine kernels and a little salt and pepper in the bowl of a food processor. Work to a paste and, with the motor running, add the olive oil in a thin stream to produce a loose-textured purée. Pour into a bowl and stir in the parmesan cheese.
