Böreks are cork-shaped filo pastry parcels. The basic stuffing is mashed potato, laced with finely sliced spring onions and plenty of fresh herbs. The filling can be varied to suit the soup they will accompany.

Ingredients

For the pastry

  • 16 filo pastry sheets, measuring about 18 X 25 cm (7 X 10 inches)
  • 50 g (2 oz) butter

Method

  • Preheat the oven to Gas Mark 4/180°C/350°F. If you are using cold mashed potato, first melt the butter in the hot milk and stir it into the mash before you mix in the spring onions, herbs and seasoning.
