Melba toast, those wafer-thin crisp triangles of toasted bread, go well with any delicate soup. I like to serve it with a flavoured butter that has some connection with the soup. This particular butter is delicious with Roasted Tomato Soup with Green Dumplings.

For the Melba toast

  • 8 slices of stale white medium-sliced bread

Method

  • To make the Melba toast, toast the bread, remove the crusts and slice the toast horizontally through the middle to make two thin slices. Cut these into triangles and toast the uncooked side briefly under a hot grill, allowing the toast room to curl. Cool on a rack.
