Trying to find a way around the sweetness in early batches of the Maple Pecan Granola, I searched the aisles of grocery stores looking for ways to boost the maple flavor. I found Clearly Maple by Maple Gold, a jar of amber-colored, intensely flavored syrup that is as thick as honey but made from pure maple syrup. Using this product allowed me to reduce the sweetness in the granola while still retaining the great maple flavor. Since not everyone will have access to this product, I call for a reduction of maple syrup in the recipe. However, if you come across Clearly Maple, usually found in well-stocked grocery stores, you can make the granola recipe as follows:
Replace step 4 with this: Measure the ingredients into a small, heavy-bottomed saucepot. Place it over a medium flame, stir once, and cook until the syrup comes to an even boil, about 4 minutes. Continue with step 5.
