These crackers are softer and thicker than most and sprinkled with two kinds of seeds, pale sesame and charcoal-colored poppy seeds. The unusual addition of finely grated cooked egg yolk gives the crackers a remarkably moist crumb. To keep the crackers tender, the dough is rolled out only once and cut into rough squares. These crackers are fantastic with a bit of mild goat cheese or topped with smoked fish.
