These cookies are gorgeous little domes with a tawny yellow crumb and indigo flecks of dried blueberries. They have a delicate sugar crust and a soft center. The crumb comes from using both finely ground cornmeal and powdery yellow corn flour. Resist the urge to use a coarser cornmeal, as it can give the cookies an unpleasant grittiness.
