Challah, like brioche, is a bread made from dough rich in eggs and butter. Traditionally, the dough is twisted into long ropes to create a braid and then sprinkled with poppy or sesame seeds. I always love reaching into the center of the braid for the soft bread in the middle. This bread uses Kamut flour and millet flour, for both their mildness and their distinctive color. The yellows and golds of the flours, the egg yolks, and the butter produce the challah’s traditional tawny colo
