This is my favorite whole-grain flour mixture, which I call for in the recipes in this chapter. You can make a large amount and keep it, as I do, in a jar on the kitchen counter along with the other flours I use most frequently. If you’re only going to use a small amount of this mix, cut the recipe in half.
Measure all the flours into a bowl and whisk together.
