In the fall, when the mornings become overcast and foggy and the apples and squash are piling up at the farmers’ market, I like to head to the kitchen to make this homey, rustic dish. A great source of breakfast protein, this porridge is satisfying alone, but it’s even better with a spoonful of jam or compote.

Spiced Milk

  • 1 cup heavy cream
  • 1 cup whole milk

Method

  1. To make the spiced milk, smash the cardamom pods with the back of a pan or the side of a knife. In a small saucepan, combine the cream, milk, spices, brown sugar, and salt. Bring the mixture to a boil, immediately turn the heat off, and leave the milk to steep, about 20 minutes.
