Zucchini Bread

Rye flour is a lot subtler than you might think, and its malt flavor pairs well with fresh herbs, in this case basil and mint. Grated zucchini is stirred into the batter for moisture and substance, as well as color. This bread was inspired by the sometimes overwhelming amount of zucchini in my garden. At the height of zucchini season, when it gets difficult to imagine what else to do with the stuff, try mixing up some of this bread. I especially like a slice with a nub of melt
