Spaghetti vongole

This is my favourite spaghetti dish, enjoyed even more at an outside table with hectic Italian waiters dashing around under the sun. Sometimes I order this dish only to find tomato in it, which I do not care for. There are two versions of this dish, so check first.

Although clams can be bought all year round, post February they are thin and wasted, but start fattening up over summer for the coming cold.

Come October, they are good to go again.
