Does a perfect peach really need the interference of heat? Probably not, but this is a simple pudding I make when the fruit bowl plonked on the table seems lazy. Serve chilled.

Ingredients

  • 4 good large ripe (not mushy) peaches
  • 600 ml white wine
  • juice of 1 lemo

Method

First make the almond biscuits. Preheat the oven to 180°C fan/200°C/Gas 6. Line a large baking tray with baking paper.

Whisk the egg whites lightly in a bowl to break up the albumen, but not so that they are too frothy. Whisk in the sugar, melted butter and vanil
