Dutch Split Pea Soup is never cooked in small portions. Therefore, in a large saucepan, combine the pork shank and split peas with 4 quarts of water and bring to a boil, skimming off any impurities that bubble to the surface with a skimmer if necessary. When no more foam bubbles up, add the pork belly.
