  • Water 1 gallon
  • sugar 2 lb. of the very coarsest

Method

  1. Boil the water and sugar together.
  2. Skim thoroughly.
  3. Add one quart cold water for every gallon of hot.
  4. When cool, but not cold, put in the piece of toast spread with the yeast creamed with a little sugar.
  5. Stir for 9 days.
  6. Then barrel it.
  7. Place it in such a situation that the sun may lie on it.
