  • Rhubarb 2 lb.
  • sugar 2 lb.
  • sultanas

Method

  1. Peel and cut up the rhubarb; peel and chop up the onion finely.
  2. Bruise the ginger and tie it in a piece of muslin, put all with the rest of the ingredients into a heavy English or Scottish aluminium saucepan or preserving pan and boil till it thickens.
