Ingredients

  • Celery 2 heads
  • onion 1
  • mace 1

Method

  1. Wash and scrub the celery and cut it in pieces.
  2. Boil it in slightly salted water, with onion peeled and cut up, mace and peppercorns, till the vegetables are soft.
  3. Then drain off the water and rub the vegetables through a hair sieve.
  4. Add to them the white stock.
