- Cut the oxtail in pieces, wash and dry it; flour it and fry in the butter; put into a soup pot or saucepan.
- Then prepare and cut up the vegetables and fry them in the same fat.
- Put them also into the pot.
- Pour 2 quarts of hot water over them.
- Add the herbs, and simmer gently for 3 hours.
- Strain.
