  • Oxtail 1 large one
  • flour
  • water 2 quarts

Method

  1. Cut the oxtail in pieces, wash and dry it; flour it and fry in the butter; put into a soup pot or saucepan.
  2. Then prepare and cut up the vegetables and fry them in the same fat.
  3. Put them also into the pot.
  4. Pour 2 quarts of hot water over them.
  5. Add the herbs, and simmer gently for 3 hours.
  6. Strain.
