This is from the manuscript Cookery Book of the Worcester Caterer and Cook whose name is missing with the cover of his book. [His recipes are most excellent. Many have been tested in the Experiment Kitchen of the English Folk Cookery Association.—ED.]

Of this particular ‘receipt’ he says: Madam Parker told me she gave two guineas for it. She gave it me for a receipt I gave her for curing hams, which is also very excellent.
