Ingredients

  • A hen
  • parsley, a handful
  • thyme, a

Method

  1. Put the hen in a pot with enough cold water to cover.
  2. Bring to boil.
  3. Add the onion, herbs, pepper and salt and clove.
  4. Simmer till the broth is reduced to less than a pint, and strain.
  5. Remove any fat and serve broth in a porringer.
