Mock Turtle

This is one of the Mayo family recipes sent by Mr. H. Mayo Leman, of Nottingham.

Method

  1. Take of lean mutton sufficient to make 3 pints of strong broth.
  2. When cold take off the fat.
  3. Then put in an anchovy chopt fine.
  4. An onion chopt fine, the rind of half a lemon chopt fine, with the juice infused in a little thyme.
  5. One dozen oysters if in season.
  6. Half a teaspoonful of chian (cayenne) pepper.
  7. Half a pint of Madeira wine and a little grated nutmeg.
