The sender of this recipe was taught to make sauce and other things by Miss M. M. Mallock, sister of W. H. Mallock. Miss Mallock was one of the first educated women to train in cookery. (She was a student at the Birmingham School now closed, and is the author of Economics of Modern Cookery or A Younger Son’s Cookery Book, 1896 and an article on ‘Old English Cookery,’ Quarterly Review, January, 1894.)
