Ingredients

  • Lean boiled ham, shredded fine, 2 oz.
  • shallots 3 finely chopped, or a small quantity of chopped chives when in season

Method

  1. Heat the ham, finely chopped shallots or chives in the butter over the fire for 4 minutes without browning them.
  2. Add the brown sauce.
  3. The lemon juice and pepper and boil for 5 minutes.
  4. Stir in the chopped parsley, and serve with veal cutlets or any grilled meats.
