- Tomatoes, a little water, a few peppercorns, pepper and salt
- Put your tomatoes in a stewpan with a very little water and a few pepper-corns tied up in a piece of muslin.
- When quite soft, lift out the pepper-corns and rub the tomatoes through a tammy or hair sieve.
- Add pepper and salt, cayenne and white vinegar to taste.
- Add a bit of butter, which is a great improvement.
