I would never have thought about adding bacon to fish but this did work. I used sea bream then added a knob of butter, splash of milk, glug of white wine. I finished the dish by adding breadcrumbs and 11/2 rashers of back bacon. This tasted delicious. I’m not normally a fan of soggy breadcrumbs but the wine was absorbed by them and really added to the flavour. I served the fish with new potatoes, kale, carrots and peas. Yum 😋
