  • Red mullets
  • chopped parsley

Method

  1. Butter a baking dish.
  2. Clean but do not draw the mullet; lay them in the dish.
  3. Sprinkle them with chopped parsley, shallot and grated cheese.
  4. Add some white wine and bake.
  5. Make a sort of tomato sauce with tomato, the liquor in which the mullet was baked, some butter and flour, season with a very little cayenne peppe
