The Severn is famous for its shad as well as its salmon, and great quantities formerly abounded opposite the Isle of Dogs in the Thames. It can be grilled and served with caper sauce; or stuffed with veal stuffing and baked with bacon; served with brown sauce sharpened with lemon juice or chopped pickled gherkins; or it may be boiled and served with the excellent Dutch sauce.
