- Beat the steaks a little.
- Flour them and season with pepper and salt.
- Fry them a nice brown, in a little dripping.
- Lift them out, and place them in a fireproof glass oven dish (in former days they were put in a stewpan).
- Fry some sliced onions, add a little flour to them, sufficient to take up all the fat.
