Ingredients

  • Beef 4 or 5 lb. silver side of the round
  • with a loose piece of fat
  • stuffing made of bread-crumbs

Method

  1. Boil the fat separately.
  2. Roll the beef round into a fillet, skewer and tie it round.
  3. Have ready a seasoning of bread-crumbs, pepper, salt, parsley and suet.
  4. With a sharp knife make 3 incisions in the beef.
  5. Into these press the seasoning.
  6. Have ready 3 good-sized Spanish onions into each of which stick 3 cl
