  • Young chicken
  • lemon peel
  • lemon juice

Method

  1. Truss the chickens and put them into enough hot water to cover them.
  2. Simmer till half cooked and keep well simmered.
  3. Lift out, untruss and cut in quarters.
  4. Add the thin peel and juice of one lemon to the broth, also a little nutmeg, pepper and salt.
  5. Return the chickens to the broth and finish cooking.
