Ingredients

  • Any kinds of edible young green herbs (wild ones) principally
  • Easter ledges (persicaria) young nettle-tops, dandelion leaves, lady’s-mantle (alchemilla). (N. B.—Many other kinds are used but above make a delicious pudding.)

Method

  1. Wash the leaves (several handfuls).
  2. Put into boiling water and boil for 10 minutes.
  3. Strain.
  4. Chop up the leaves.
  5. Add one hard-boiled egg chopped up small.
  6. And one raw egg beaten up.
  7. Add a little butter, pepper and salt.
  8. Mix all together.
