To make a good family dumpling make a crust as follows, and line a large pudding basin with it:

Ingredients

  • Flour ¾ lb.
  • suet 6 oz.
  • salt

Method

  1. Grease basin.
  2. Make and roll out erust.
  3. Line basin, reserving a piece of the suet pastry to cover the top.
  4. Cut the pork into pieces, also the onions.
  5. Arrange them in the crust-lined basin in alternate layers seasoning each.
  6. When full add a gill of water.
  7. Put crust on top.
  8. Cover with gre
