- Pig’s chitterlings (or sheep’s pluck; and in fact the heart, liver and lungs or lights of any beast used for food)
- sugar, spice, apples and currants.
Method
- Clean chitterlings well.
- Simmer till tender.
- Chop finely.
- Pare and core and chop some apples.
- Wash and dry some currants.
- Mix with the chitterlings.
- Sweeten with sugar.
- Season with spice.
- Mix well and use.
