Ingredients

  • Pig’s chitterlings (or sheep’s pluck; and in fact the heart, liver and lungs or lights of any beast used for food)
  • sugar, spice, apples and currants.

Method

  1. Clean chitterlings well.
  2. Simmer till tender.
  3. Chop finely.
  4. Pare and core and chop some apples.
  5. Wash and dry some currants.
  6. Mix with the chitterlings.
  7. Sweeten with sugar.
  8. Season with spice.
  9. Mix well and use.
