This is sent by Mrs. K. Earp, of Brighton, and very much resembles the egg and bacon pie of the North.

Ingredients

  • Short pastry
  • bacon 2 to 3 oz. for each person
  • eggs 1

Method

  1. Line a shallow piedish with either short or rough puff pastry.
  2. Arrange pieces of bacon in it.
  3. Dust over a pinch or more of mixed herbs according to size of pie.
  4. Break one egg for each person.
  5. Pour carefully in without breaking the yolks.
  6. Add pepper and salt to taste.
  7. Cover with pastry and bak
