This excellent Yorkshire recipe is sent by a Scarborough B.B.C. friend. She writes: ‘No fish except “woof” or ling is really satisfactory; “woof” is the local name for catfish (dory in some parts of Scotland, not John Dory!) It must be absolutely fresh. I would not buy it except on the coast where it has been landed. It is at its best from Easter until end of August.’
