Ingredients

  • Old potatoes
  • cold water
  • salt
  • butter
  • hot milk
  • cayenne pepper

Method

  1. Peel and boil the potatoes in cold water with a little salt.
  2. Drain off the water but don’t throw it away.
  3. Mash the potatoes.
  4. Put on a little milk to boil.
  5. Add some butter to the mashed potatoes, and mix it in.
  6. Stir in the hot milk.
  7. Whisk over the fire with a wire whisk till very light and creamy
