  • Bloaters 4
  • cold boiled potatoes
  • onions or shallots
  • herbs

Method

  1. Steep herrings, if dried, overnight.
  2. Steam them and bone them.
  3. Mash them with a fork with some cold boiled potatoes.
  4. Season well with the uncooked onion or shallot, finely chopped.
  5. Add herbs finely chopped.
  6. Press into a mould, turn out and serve cold, garnished with slices of hard-boiled egg, tomato and g
