  • loaf sugar ¾ lb.
  • water 1 pint
  • apples

Method

  1. Dissolve the sugar in the water and then boil up.
  2. Boil the syrup to candy height (245°F.).
  3. Add the pared, quartered and cored apples.
  4. Wash the lemon and add half the rind grated.
  5. Boil until quite stiff, keep stirring all the time; and
  6. Pour into moulds which should first be brushed with a little almond oil
