  • Lump sugar ½ lb.
  • butter, 2 oz.

Method

  1. Beat the eggs well.
  2. Put them into the top of a double saucepan.
  3. Rub the sugar on the outside of the lemon (which must, of course, be first washed and dried) until you have taken all the essence, when this happens the sugar will be yellow and must be dropped into the eggs.
