This and other recipes sent by Mr. H M. Leman, of Nottingham, are taken from the old still-room books of his mother’s family, the Mayo family of Cheshunt, Herts. He has purposely selected recipes with names attached that give them historical interest. This one is signed ‘Mrs. Mayo, Cloak Lane.’

  • Seville orange (or lemon) 1
  • Naples or sponge biscuits 2

Method

Butter a dish and line it with puff pastry; and make the mixture to fill it as follows:

  1. Boil the thinly pared rind of the orange (or if they are not in season a lemon) until soft.
  2. Beat it in a mortar with the juice of it.
  3. Grate the biscuits very fine; add this to the orange peel.
  4. Cream the butter and beat all togethe
